Samosas

Samosas are triangular shaped and are filled with vegetables.
Ingredients
  • 200g potatoes
  • 30g carrots
  • 2 tablespoons of ghee or oil
  • 2 pinches of ground turmeric
  • 1 teaspoon of salt
  • 2 teaspoons of garam masala
  • 100g frozen peas (make sure they are thawed)
  • 20 pieces of filo pastry (about 12 inches by 6 inches)
  • Cup of vegetable oil
  • Peel the potatoes and carrots and boil them for 5 minutes - part cooked. Drain them and when they have cooled dice them.
  • Place all the vegetables in a bowl, adding the ghee, turmeric, salt, garam masala and peas. Mix them well together.
  • Lay out a sheet of filo pastry and brush half the strip with oil. Fold it in two, longways and brush one sorner with oil.
  • Put two teaspoons of the vegetable mixture on the oiled end of the pastry and fold the pastry diagonally, making a triangle.
  • Fold the triangle over and over until all the pastry is used up.
  • Put the samosas on an oiled baking tray, brush the tops with oil and bake them for 20 to 30 minutes in the oven at Gas Mark 5 (190°C)
