Cheese Blintzes

Cheese Blintzes are like thin pancakes, which can have a variety of fillings - in this case, cheese.
Ingredients
  • an egg
  • 120ml milk
  • ½ teaspoon of salt
  • 1½ teaspoons of vegetable oil
  • 50g plain flour
  • 225g cottage cheese
  • another egg for the filling
  • 1 teaspoon of sugar
  • ¼ teaspoon of vanilla essence
  • Oil for frying
  • Jam
  • Mix the egg and milk with the salt and oil. Beat or whisk together. Add flour and continue to mix until smooth, creamy mixture.
  • Coat the frying pan lightly with oil and place on a medium heat.
  • When the pan is hot, pour a little batter into the pan. Run the batter round the pan until the bottom is covered. Cook for a minute until golden brown on one side.
  • Turn the pancake out onto some kitchen paper, brown side up. Make further pancakes until all the batter is used.
  • The filling is made by placing the cottage cheese, egg, sugar, vanilla essence into a bowl and mixing the ingredients together well.
  • Pre-heat oven. Take a pancake and place brown side up. Place about 1 tablespoon of filling at one end and roll the pancake up. Fold the ends over to seal it.
  • Grease an oven dish. Put the blintzes into the dish, with the folded-over flaps down. Bake in the oven until golden brown.
  • Serve with jam or fruit sauce.
