Onion Bhajis

Onion Bhajis may be eaten at any time and, possibly, you have already enjoyed them. They are particularly popular at the Hindu festival of Holi.
Ingredients
  • 3 large onions
  • 150 g of chick pea flour
  • 7 tablespoons of vegetable oil
  • 1 teaspoon of mustard seeds
  • ½ teaspoon of ground turmeric
  • ½ teaspoon of salt
  • a pinch of chilli powder (up to ½ teaspoon to taste)
  • Slice the onions
  • Put four tablespoons of vegetable oil in a frying pan and fry the turmeric and mustard seeds together - the seeds will begin to pop when ready.
  • Reduce the heat and add the sliced onions. Fry gently for about 10 minutes.
  • Take the chick pea flour and add 1 tablespoon of this, stirring it in. Keep on adding the flour until it has all been stirred in.
  • Now add the salt and a pinch or two of chilli powder - up to a teaspoon if you like it hotter.
  • Remove the pan from the heat and allow the mixture to cool down. When cool, separate it into four pieces and mould each piece into a ball shape. Flatten these using a spatula.
  • Heat the oil that is left and fry the bhajis until they are brown all over. Use a spatula to turn when necessary.
