Mattar Paneer

This is a popular Indian festival dish made with spiced vegetables and Indian cheese.
Ingredients
  • 275 g of an Indian cheese called paneer. (mozzarella will do instead)
  • 6 tablespoons vegetable oil
  • 2 onions
  • ½ pint water
  • ½ teaspoon salt
  • 450 g peas
  • 1 teaspoon sugar
  • 2 teaspoons ground turmeric
  • ½ teaspoon chilli powder
  • 2 teaspoons dried ginger
  • 1 tablespoon fresh chopped coriander
  • Chop the paneer into small chunks and fry them in oil in a frying pan until brown. Keep turning the pieces so that they brown all over.
  • When brown, take the cheese out of the frying pan and drain on a piece of kitchen towel. Leave the oil in the pan.
  • Chop the onions into small pieces and put them in the pan, frying for about 4 minutes. Keep stirring.
  • Pour in the water and salt and bring to the boil.
  • Add the peas and sugar. Cover the pan. Reduce the heat to a simmer and cook the mixture for 10 minutes.
  • Now put in the fried paneer, turmeric, chilli and ginger. Simmer for 10 more minutes (uncovered pan).
  • Arrange the mattar paneer in a dish and sprinkle the coriander over it.
